Problem

The wine market is marked by an excess of options, knowledge asymmetry, and low digitalization of the buying journey. For consumers, more than 10 A thousand labels, grapes and styles make the choice intimidating; many do not know how to interpret a menu, choose a wine suitable for the occasion, or pair it with the meal. This creates insecurity, choice paralysis, and frustrating experiences. For restaurants, bars and hotels, the problem is the opposite: the wine list is underused and the absence of a physical sommelier, the high cost of training and the turnover of the teams make it difficult to guide customers, convert doubts into sales and increase the average ticket. In addition, information about preferences, charts, inventory, and behavior is fragmented, preventing personalized decisions and business intelligence in real time. The result is a journey that is not accessible for those who buy and a loss of revenue for those who sell.

Solution

iTrois solves the problem through Sommie, a decision platform for wines based on generative AI and specialized RAG. In B2C, the user enters a profile, dish, occasion or preferences and receives explained recommendations, direct and reverse harmonizations, and educational content, reducing insecurity and making the knowledge of a sommelier accessible. In B2B, restaurants, bars and hotels offer a smart menu via QR Code that crosses preferences, menu and inventory to recommend, in real time, the wines with the highest adherence and sales potential. A SaaS dashboard supports letter management, inventory, and business intelligence, with expected integration with POS systems. Each interaction generates proprietary data and improves personalization. Thus, Sommie connects discovery, choice, purchase and service on a single platform, improves the consumer experience, increases conversion and the average ticket, and reduces dependence on constant training or a physical sommelier.

Business model

Sommie adopts a hybrid model of recurring and transactional revenues. B2C: freemium app, with free resources for purchase and conversion to Sommie PRO that includes advanced AI, expanded wine cellar, image harmonization, gamification, benefits and wine tourism. The plan costs R$ 19,90/month or R$ 199,90/year, resulting in an expected annual ticket of approximately R$ 200 per subscriber, with the goal of converting 15% from the free base. B2B: SaaS for restaurants, bars, and hotels, with a deployment fee of R$ 999 per unit and starting monthly fee of R$ 449, adjustable progressively according to the number of restaurants in the same group. With a minimum loyalty of three months, the initial contract represents R$ 2.346 per unit. Maintained by 12 months, the first-year ticket is R$ 6.387,being R$ 5.388 of annual recurring revenue. The model is complemented by commissions from 6% the 10% about wine sales and wine tourism experiences with partners, originated by the platform.

Market

Sommie acts in the intelligence layer of the global wine market, estimated at US$ 622,85 billions in 2026 and designed for US$ 1,33 Trillion in 2034, according to Fortune Business Insights. Within this market, our directly addressable segment brings together beverage software, AI recommendation, and digital solutions for consumers and hospitality. The global wine, beer, and spirits software market is estimated at US$ 16,38 billions in 2026 And it must reach US$ 23,05 billions in 2030, according to Research and Markets. The AI wine recommendation niche, on the other hand, was estimated at US$ 1,8 Billion in 2025, with a projection of US$ 7,6 billions in 2034 and annual growth of 17,3%, according to DataIntelo. Sommie starts with personalized recommendation and SaaS for restaurants, but it also participates in the monetization of e-commerce and wine tourism. Thus, it acts on a global chain greater than US$ 600 billions, with inflows through rapidly growing technological segments.

Competitors

Sommie's most relevant direct competitors are Preferabli, Aivin, and Sommo. Preferabli is the closest competitor in B2B/B2C, offering sensory AI, personalization, and recommendations for retail, restaurants, and hospitality. Aivin acts as an AI sommelier for selection and harmonization, with applications for consumers and professionals, although it is in limited beta. Sommo mainly competes in B2C, with label and letter reading, harmonization, digital wine cellar, taste profile and education. Vivino is a large scale indirect competitor: its strength lies in community, reviews, discovery, and marketplace, but not in an integrated decision and management infrastructure for restaurants. We also compete indirectly with physical sommeliers, training, static charts, and isolated management tools. Sommie differentiates itself by integrating generative AI, specialized RAG, personalization, harmonization, proprietary data, and B2C and B2B solutions on a single platform.

Competitive differentiation

Sommie's differential is that it integrates, in one platform, the B2C journey and the B2B operation of the wine market. While Vivino focuses on reviews and marketplace, Sommo prioritizes B2C, and Aivin is still operating in beta, Sommie combines generative AI and specialized RAG with explained recommendations, direct and reverse harmonization, education, and taste profile. For restaurants, the smart menu via QR Code crosses preferences, menu and inventory; the SaaS panel being implemented adds menu management, inventory and sales intelligence, with planned integration with POS. Each interaction generates proprietary data that enhances personalization and upsell opportunities. Sommie also connects discovery, purchase, service and wine tourism, creating multiple revenue channels: B2C subscription, B2B SaaS, and commissions. This combination of specialized technology, data, operational integration, and distribution forms an ecosystem that is more complete and difficult to replicate than isolated solutions.

Entry barrier

The barrier to entry is not in isolated access to AI, but in the cumulative data set, vertical knowledge, integrations, and distribution. Sommie combines specialized RAG with a structured base of wines, sensory profiles, pairings, and tasting notes. Each user interaction generates proprietary data about preferences, occasions, and choices, improving recommendations and making the product more difficult to replicate. In B2B, the connection of the smart menu with menus, inventory, sales and, in the future, POS systems incorporates Sommie into the restaurant operation, expands commercial intelligence and creates replacement costs. B2C+B2B integration generates a data cycle: consumers improve personalization, while establishments expand context, distribution, and monetization. Partnerships with restaurants, wineries, e-commerce and wine tourism, combined with a presence in Brazil, Dubai and Brussels, reinforce a barrier based on data, specialization, relationship and execution.

Traction

Yes. Sommie has product and market traction. Between September of 2025 And July of 2026, the base went from 68 For more than 8.000 active users, growth greater than 11.000% in ten months. Close to 30% of the acquisition occurred organically, indicating interest without exclusive dependence on paid media. The MVP has been validated with experts and early adopters, and the freemium app has already been launched globally. In B2B, the SaaS Sommie Restaurante is undergoing pilots and POCs with premium restaurants in Brazil, validating the smart menu, recommendations, and sales intelligence before the commercial scale. The startup also established a presence in Brazil, Dubai and Brussels and integrates programs such as NVIDIA Inception, AWS Startups and Stripe Startups. Monetization is at an early stage, with the conversion to Sommie PRO and the commercialization of B2B SaaS as the next recurring revenue drivers.
